Inspired by its Miami roots and a recipe for fresh 24-hour citrus-marinated chicken, Pollo Tropical® began offering guests across Florida a creative take on traditional Cuban dishes, as well as foods from other parts of Latin America, over 35 years ago.
Since then, Pollo Tropical® has been dedicated to preparing fresh, great-tasting foods in its kitchens every day – like its signature Fire-Grilled Chicken and Mojo Roast Pork, served with the fan-favorite black beans and rice, in platters and TropiChop® bowls.
